17 May Review: Crunchy Coconut Chicken Bites
If you’ve read some of my posts, you may already be up-to-date on my non-celiac gluten sensitivity diagnosis. For me, finding gluten-free recipes is like playing Double Dutch. I jump in and get hit with a jump rope sooner or later! It can be very frustrating, especially when I’m already restricted in what I can or cannot eat. This is why I am reviewing a recipe by Mama Knows Gluten Free.
Ok, guys. We all have strengths and weaknesses. My strengths have NEVER involved cooking in the past. In fact, I can vividly recall one time cooking for my husband while heavily pregnant with my first child. I had whipped up some baked barbecue chicken, garlic mashed potatoes and steamed veggies. Sounds like a good dish, right? This is what happened: my husband took one bite and could not eat the rest. And me? I had to run to the bathroom and wipe the flood of tears running down my face. Now, I’m not usually THAT sensitive when it comes to my cooking because I’m aware of what I’m good at and what I’m not. But, I was about 8 months pregnant; so, I’ll blame those tears on the pregnancy hormones. Anyhow, I’ve now spent enough time in the kitchen where I at least know how to use a knife now! Haha!
Let’s get back to my review. I’ve collected a small number of gluten-free recipes the past couple of years. But, I’ve always liked trying new foods (especially ones that don’t taste gluten-free; you know, when you take a bite and it has a weird after-taste or texture?) So, anytime I see a recipe that can be modified for all of the food allergies in my household, I’m up for trying it. When I saw the gluten-free Crunchy Coconut Chicken Bites recipe on the Mama Knows Gluten Free site, I figured it was worth a try. Here’s the thing: I don’t care for complicated recipes. I’m a busy mom and don’t have the time to act like I’m a renowned chef. Nope. I’m just a busy momma trying to find recipes that will make my life easier, not difficult. This is one of the reasons why I was attracted to this recipe. This recipe was so simple to follow and the ingredients were pretty much commonplace. It instantly became one of my husband’s favorites.
I know that we have to get creative when finding what ingredients are safe (for food allergies) and can work for certain recipes. For instance, I tend to crush corn tortilla chips to use as the breading in some recipes. So, I was interested in how these chicken bites would taste with Honey Nut Chex cereal. I’ve never heard of using this before. Sure, I’ve used gluten-free Cheerios for a cheesecake crust in the past, but it never crossed my mind to use the Chex cereal. Let me tell you, it was genius. Also, it was so affordable! I actually had to buy cereal for my kids anyways, so I purchased this cereal. The only ingredient I needed to do a purposeful search was the sweetened shredded coconut. Aside from that, most families buy chicken, cereal and mayonnaise on a regular basis. So, I didn’t spend much money at all. I did have to make ONE modification for this recipe. I don’t use regular mayonnaise due to my son’s food allergies. I actually use the brand Just Mayo, which is a safe (and delicious) alternative for my household. Aside from that, I got the ball rolling and started making these amazing bites. My husband also chimed in and made an apricot glaze as a dip for this recipe. DELICIOUS.
Listen, I’m not getting paid to do this review. I wasn’t even asked to try out this recipe. In fact, if I did not like it, I would not have been writing this post. But, I encourage you to try this recipe! Now, I will be transparent. My daughter was not a fan due to the texture. She is my picky one, though. My younger son had no problem eating this. To complete this meal, I tossed in some fries and it definitely was a hit. I even had a bigger portion of dinner that evening than usual. It was worth it!
